Ingredients:

  • 1/2 cup (99 g) sugar
  • 1/2 cup (120 ml) water
  • 1 1/2 cups (360 ml) strong black tea, regular or decaffeinated
  • 3/4 cup (180 ml) freshly squeezed lemon juice

Preparation:

  1. Have 6 popsicle molds ready to receive liquid and clear out a flat space in the freezer.
  2. Stir sugar and water together in a small saucepan and bring to a boil over medium-high heat. Boil for about 30 seconds or until sugar dissolves. Remove from heat.
  3. Whisk the sugar syrup, black tea and lemon juice together; I like to do this in a measuring cup with spout for easy popsicle mold filling.
  4. Pour liquid into popsicle molds, dividing evenly. Insert sticks, if they have a holder. Otherwise, freeze for an hour or more just until slushy, then insert wooden sticks in the center of each pop. Freeze until solid. I find that the flavor and texture is best if eaten within 3 days.

Tips

  • Staying hydrated can be hard for some of us, but an ice pop is a nice addition to your daily liquid intake. You can use caffeinated black tea for these pops, or decaf.
