Creamy Coleslaw with Raisins

This creamy coleslaw features cabbage, carrots, bell pepper - and raisins! All in a creamy mayo based dressing. Sweet and crunchy and a great accompaniment to summer fare.

Ingredients:

  • 1 pound (455 g) green cabbage, finely shredded
  • 1 pound 455 g red cabbage, finely shredded
  • 3 medium carrots, ends trimmed, shredded
  • 1/2 green bell pepper, cored, julienned
  • 1 1/2 cups (249 g) raisins
  • 2 cups (452 g) mayonnaise
  • 1/2 cup (120 ml) apple cider vinegar
  • 2 tablespoons sugar
  • 1 tablespoon celery seed, optional
  • 1 tablespoon Dijon mustard
  • Kosher salt
  • Freshly ground black pepper

Preparation:

  1. Toss the two cabbages, the carrot, bell pepper and raisins together in a large mixing bowl; set aside.
  2. In a small bowl whisk together the mayo, vinegar, sugar, celery seed (if using) and mustard. Taste and season well with salt and pepper.
  3. Drizzle the dressing over the slaw, tossing as you go. Coat evenly but do not over-dress. You might not use all of the dressing. Your Creamy Coleslaw with Raisins is ready to serve but improves upon sitting for about 30 minutes to an hour. Slaw can also be refrigerated in an airtight container overnight. Serve at a cool temperature but not cold.

  • If you need a dish to bring to a summer potluck, this one is a great choice. No one will know this is your "diet" food.
