Ingredients:

Preparation:

  1. Position rack in hottest area of oven. Preheat oven to 325°F/165°C.
  2. Place roast in roasting pan. Very generously season the roast all over with salt and pepper; go for it liberally.
  3. Stir together the softened butter, oil and Fody Lemon & Herb Spice Blend in a small bowl until combined, then stir in the horseradish. Use a combo of a silicone spatula and tour hands to slather this mixture all over the roast beef. Place the roast with the fattier portion facing up.
  4. Roast the beef for 45 minutes, then check the temperature. Roast until 125°F/54°C for medium rare. The exact timing will largely depend on the temperature of the roast when it goes in the oven. Allow to rest for at least 10 minutes to allow juices to distribute. Slice and serve! Any leftovers make the BEST SANDWICHES EVER!

Notes:

Tips

  • Any leftover prepared horseradish lasts a very long time in the fridge. Mix with a ,little mustard on your leftover roast beef sandwiches!
