Low FODMAP Salted Caramel Liqueur: Start with our Low FODMAP Salted Caramel Sauce, add lactose-free half-and-half and 100 proof vodka. That’s it. You’ll be sipping our Low FODMAP Salted Caramel Liqueur!

Ingredients:

Preparation:

  1. Place the Low FODMAP Salted Caramel Sauce and half of the lactose-free half-and-half in a saucepan and heat very gently over low-medium heat, just until caramel dissolves and incorporates with the half-and-half, whisking gently. Remove from heat and cool.
  2. Whisk in vodka and remaining half-and-half, then strain through a very fine-meshed strainer into bottles, seal tight and store up to 1 month in the refrigerator. I do like it best if chilled overnight before imbibing, but it isn’t absolutely necessary.
  3. Your Low FODMAP Salted Caramel Liqueur is ready to serve, straight-up or on the rocks or incorporated into your favorite drink, keeping in mind the FODMAPs in your mixers. Read our article on FODMAP Stacking for a refresher.

Notes:

Tips

  • You can soften extra caramel sauce over low heat, or in microwave, and dip the rim of your glass into it. While the caramel is still somewhat soft, add a sprinkle of coarse salt, such as Maldon. 
  • Caramel Apple Liqueur: Add up to 20 g of apple slices to your glass for a special caramel-apple treat (see images above). 

FODMAP Information

Our recipes are based on Monash University and FODMAP Friendly science.

  • Sugar: Monash University and FODMAP Friendly have both lab tested white, granulated sugar. Monash states that a Green Light low FODMAP serving size of white sugar is 1/4 cup (50 g). FODMAP Friendly simply states that they have tested 1 tablespoon and that it is low FODMAP. Regular granulated white sugar is sucrose, which is a disaccharide made up of equal parts glucose and fructose. Sucrose is broken down and absorbed efficiently in the small intestine.
  • Vodka: Both Monash University and FODMAP Friendly have lab tested vodka. Monash University reports that it is low FODMAP Green Light at a 30 ml serving size. FODMAP Friendly gives it a “Pass” at 1 shot or 30 ml.
