On one of those super busy summer days, I went way too long without eating and my blood sugar was taking a plunge. You know those times when you can’t even think straight? Luckily I had some cooked quinoa in the fridge. This main-dish worthy vegetarian salad came together in a flash.

What To Eat Non-Recipe

Cooked quinoa, chopped kale, grated carrot, blueberries, strawberries, a light vinaigrette and a sprinkling of Parmesan cheese. Totally hits the spot.
