A Review of the Viking Carving Set

The Right Tools Make a Difference

This Viking Carving Set is a gorgeous, gift-worthy fork and knife set that makes carving your turkey or Standing Rib Roast a dream. We were sent a set to bring into the Test Kitchen and try out. The timing was perfect, with all the holiday dishes being created.

Quality Manufacture

This two-piece set consists of an 8 inch (20 cm) carving knife and 7 inch (17 cm) forged meat fork, both designed and made in Germany.

The knife blade is fully forged with a 15-degree edge for maximum sharpness. The heat harden manufacture process produces a blade that is quite durable and that holds its sharpness very well. In the industry there is something called the Rockwell hardness scale, and if you are wondering, these rate at 55 to 56-degree hardness, which is exceptional.

The black handles are fully riveted and sealed, which makes for a hygienic piece of equipment. They are very comfortable in the hand.

The bolster and integrated tang make for a very stable, balanced blade. You will not only be able to slice with ease, but also with less wear and tear on your joints and muscles.

The manufacturer says they are dishwasher safe, but we recommend hand washing with all knives.

Putting Them to Work

Over the last month we have been roasting turkeys and roasts, creating new brisket recipes, and of course, there are the weekly whole chicken dishes. We used this set on several different types of proteins, both raw and cooked.

In the image below you can see how effortlessly it helped remove excess fat from our Standing Rib Roast. The blade was easy to control and it glided through the fat with ease. The fork helped keep things in place and has a sturdy feel to it.

When we carved our turkeys we were particularly impressed with how it handles the skin. Sometimes a knife can glide through meat but tear skin. This Viking knife went through both like butter.

Having a turkey and a Standing Rib Roast to carve are obvious times that you need a good carving set, but don’t overlook the more everyday foods, such as this brisket, below.

The knife worked its way down across the grain to produce lovely, even slices.
