What To Eat: Sautéed Flounder in Browned Butter

White fish fillets cook up very quickly and make a perfect weeknight meal. Flounder has a distinct flavor that I happen to love, but you could substitute cod or any other mild flavored fish.

The key is to use unsalted butter and brown it well before adding the fish to your hot skillet. Browned butter has a nutty, complex taste and adds dimension to a simple fish dish. Fresh lemon is a must. A little salt and pepper and you are done.

What To Eat Non-Recipe

Melt a good quantity of unsalted butter in a skillet until sputtering and browned. Add fish fillets, season well with salt & pepper and cook on both sides until just done. Squeeze lemon juice over fish while still in hot pan. Serve with lemon wedges.
