What to Eat: Clean Out The Fridge
What with all the holiday cooking going on, we found ourselves with bits of this and that in the fridge. It was time to clean it out! This What to Eat idea was simple. Take whatever cooked grain you have, add some cooked or raw veggies and toss with a vinaigrette.
If you have leftover proteins, throw those in too. This became a room-temperature rice lunch for me along with a hard-boiled egg.
What To Eat Non-Recipe
I tossed together cooked brown rice, steamed green beans, raw diced yellow pepper (there was a quarter of one hiding in my vegetable bin. These have not been lab tested but I know that I tolerate them. You could use lab tested green or red bell peppers), a few halved grape tomatoes and a low FODMAP vinaigrette.
Add some Parmesan cheese, too, if you like. I like rice salads best at room temperature.

I made this for dinner tonight, with corn and green beans and red pepper, and a chili-and-cumin vinaigrette. It was a side to some seared steak, and it made for just a wonderful dinner.
Maggie, that is wonderful! A cumin-vinaigrette sounds perfect with those foods.
