These came about right after Thanksgiving but could be made anytime you have turkey around – and gravy, mashed potatoes, stuffing and cranberry sauce! I was in shock and couldn’t believe I was actually drizzling gravy over corn chips and stuffing – and Robin and I were laughing so hard I was about to cry. However, the results were SUBLIME! Shredded Pork Nachos with 3-Cheese Beer Queso

Warm corn chips and shredded pork, creamy queso cheese sauce made with beer and all kinds of fresh and crunchy add-ons: tomatoes, bell peppers, scallions, jalapeno, olives, fresh lime, and cilantro. Baja Tempeh Taco Salad

Papaya Salsa

Papaya Salsa is a little sweet (the ripe fruit), a little tart (lime juice) and a little bit spicy (jalapeño) – or very spicy depending on the amount of jalapeno that you add. My favorite corn is actually early September corn here in the Pioneer Valley, an area that encompasses parts of northern Connecticut and our area of western Massachusetts. This Cranberry Salsa blew our minds and our palates, and we couldn’t stop eating it. Finely chopped fresh cranberries, scallion greens, cilantro, chiles, lime, sugar and salt come together to be more than a sum of their parts.
