Tomato Treasure Trove: The Art of Cooking Low FODMAP with Canned Tomatoes

What can you do with canned tomatoes? Oh, so much! This economical, easy-to-find canned product is the basis for many of our most favorite dishes. Pasta all’Amatriciana

This classic Italian sauce was named after the Italian town of Amatrice, just eastward from Rome, and features cured pork (either guanciale from the jowl or pancetta from the belly), olive oil, spicy red pepper flakes, a good amount of black pepper, tomatoes, and sharp Pecorino cheese. Traditionally it is served with bucatini, which is excellent at capturing bits and pieces of the flavorful sauce inside the pasta. Sometimes we simmer sauces for hours – and sometimes we want to make tomato sauce so quickly that we can get that piping hot bowl of spaghetti on the table in less than 30 minutes. Our version of Cioppino, which is a tomato-based seafood-packed soup, sticks close to the classic and required very little tinkering. You will find both firm flesh fish as well as shellfish in this dish, which was born in San Francisco. The name hails from the Italian word for the fish stew, ciuppin, from Genoa.
