To make this Pecan Toffee low FODMAP I took a different approach and used much less chocolate and nuts – but believe me, this is still a satisfying candy experience.

Both Robin and I were drawn to the contrasting colors and textures of this dish. Kabocha squash is rich and creamy in addition to being the most gorgeous deep orange color. The reddish brown quinoa is cooked conventionally, and then tossed around in a hot skillet with garlic-infused olive oil until crispy.
Kale Salad with Butternut Squash
Robin grew us several kinds of kale this past summer in our low FODMAP garden, and you might identify kale salads with warmer months as well, but we love kale so much we wanted to create one hearty enough for the fall and winter months – this Kale Salad with Roasted Butternut Squash and Pomegranate is downright perfect.

Our 2018 Souche de Noel or “Christmas Stump”
Every year for as long as I can remember I have made a traditional French Bûche de Noël, which is basically an edible Yule log or Christmas log. The trompe l’oeil is always fun and you get to push the visual pun even further with Meringue Mushrooms. This year I decided to turn the cake on its end, literally. I give you our Souche de Noël, or holiday “stump”. Chocolate cake, espresso buttercream and chocolate ganache all rolled up and presented as a slice of the forest. The bûche de noël is a traditional French holiday dessert and one that I adopted many years ago. My children, extended family and I always look forward to it. One thing is constant – the Meringue Mushrooms as décor and that recipe happens to be low FODMAP, so be sure to check it out.

I have an entire video class on what we call Coffee-Shop Cakes. These are the cakes that you cannot wait to dig into with a hot cup of coffee or tea: cinnamon streusel cakes, pound cakes, Bundt cakes and decorative ring cakes. This Cranberry Almond Buttermilk Bundt Cake is right up the same alley.
