23 Easy Low FODMAP Potato Recipes: Which One Will You Try First?

Potatoes! White, red, yellow, starchy russet, sweet potatoes – even blue and purple potatoes – can be a main meal in the form of double stuffed baked potatoes, a weekday side-dish, a potluck salad, or they can add richness to soups. And don’t forget breakfast casseroles and home fries! We have 23 recipes for you to try and potatoes are often economical, too, so dive in!

Fully Loaded Stuffed Potato Skins

You can’t go wrong with potatoes, bacon, cheese and all the fixings! You want smaller starchy potatoes for this recipe, and it works best if they are all similar in size. Hasselback Potatoes

Hasselback Potatoes are crispy on the outside, creamy on the inside, simple to make and go with many different mains. Our version uses Garlic-Infused Oil, butter and fresh thyme. The name, by the way, hails from a classic Swedish preparation. They look kind of fancy, but the technique is actually very easy. The potatoes are sliced 1/8-inch (3 mm) thick crosswise, but not all the way through. Smoked Trout Nicoise Salad with Purple Potatoes

Sounds fancy, doesn’t it? But the smoked trout is a purchased product, and the rest of the salad is easy to make. It is quickly assembled, after you have made the jammy hard-boiled eggs, boiled the potatoes and beans and made the salad dressing. Root Vegetable Tian

Our Root Vegetable Tian combines potatoes and parsnips, beets and sweet potatoes. Sliced thinly, arranged in a baking dish, drizzled with extra-virgin oil, sprinkled with salt, pepper, dried thyme and a little Parmesan (or left out to make the dish vegan), this spectacular side-dish will enhance your weekday roast chicken – or make for a holiday meal or festive get-together. Hash Brown Potatoes

The key to making crispy hash browns is simply patience. Once you put the potatoes in the pan, wait before you move them around. You want a nice crust to form on the bottom before you flip them. You need a heavy 10-inch (25 cm) skillet for this recipe; we like using cast iron. Hash Browns are the quintessential breakfast or brunch potato dish, but they are also great alongside your dinner proteins. We added chunks of ham to the serving shown. Berbere Spiced Mashed Potatoes, Parsnips & Carrots

Our version of a Berbere spice blend is a combo of coriander, black pepper, cardamom, allspice berries, cloves, ground chile, paprika, fenugreek, cinnamon, ginger and nutmeg. It is incredibly flavorful and while we love it with chicken, it is equally fantastic with this vegetable mash of potatoes, carrots and parsnips. Potato Salad with Hardboiled Eggs

This is the classic, old-fashioned potato salad found at so many church events and potlucks – potato salad made extra creamy with hard boiled eggs, a tangy yet creamy mayonnaise-based dressing, and a little crunch from celery. Super smooth and satisfying Mashed Sweet Potatoes with Candied Spiced Pecans! The sweetness from the rich orange sweet potatoes, and crunch from candied pecans spiced with ground cinnamon and ginger create the perfect savory, yet sweet, side dish. Potato Eggplant Curry

Fish Chowder

This dictionary’s definition of chowder is “a dish consisting of fresh fish, clams etc. stewed with vegetables, often in milk”. We also have a New England style Clam Chowder for you, but this one is all about fish. Any mild white fish works. Home Fries

We think the best Home Fries start with starchy potatoes, like russets. They will create that creamy interior and crusty exterior that we look for in a great home fries’ dish. Parboiling the potatoes first until a bit tender, but still firm and not fully cooked, also helps achieve the desired end result. If you love fries and want less fat, oven fries are the way to go. They are easy to make, if you follow some simple rules. We like potatoes any which way we can get them: steamed, boiled, fried, oven roasted and mashed, as we have here. Mashed potatoes are an oft-requested side dish during the holidays, be it Thanksgiving or Christmas or other large celebratory meal. This vegan mashed potato recipe is light, due to the lack of dairy – there isn’t even any alt dairy! And it is simple. The starchy cooking water from your Russet potatoes is filled with flavor and body. Instead of throwing it out after draining the potatoes, you use this liquid to help loosen the mashed potatoes, as you mash them. It actually makes them creamy! Chicken, Cheese & Broccoli Twice-Baked Stuffed Potatoes

These over-stuffed potatoes are perfect for a light meal, dinner or lunch, served alongside a big green salad with a nice sharp vinaigrette.
