Hankering for fresh veggies mid-winter? We first made this recipe in the midst of a cold snap, with minus 30°F (-1°C) and colder with the wind-chill factor. Making this colorful salad was like a burst if sunshine brought inside and piled into a bowl. It is crunchy and super colorful. Talk about eating the rainbow! Pan Roasted Green Beans & Almonds

Have you heard that you have to “massage” your kale to make a good kale salad? We have nothing against a hands-on approach, but this recipe offers you an alternative technique that makes prep easier. The slightly bitter kale is balanced by the earthy carrots and sweet apple, dressed with a simple olive oil vinaigrette with a touch of Dijon mustard and maple syrup. Just when you think you’re bored with the idea of leafy green salads, along comes a recipe such as this, which will make you think about salads in a whole new light. Thinly sliced fresh fennel, along with kale and parsley, and the addition of sweet juicy clementines, make this a salad to remember. It appears quite fancy, but it is very easy to put together. Everyday Meatloaf

We call this Everyday Meatloaf because you will have time to make it, even on the busiest of days. While you could use all beef, a combo of beef, veal and pork makes for a particularly succulent meatloaf. We add shredded and chopped veggies to our meat mixture for extra moisture, flavor, and nutrition. Be sure to make enough so you have quick go to lunch options- re-heated with a side salad or as a sandwich layered with tomatoes, crisp lettuce, and a good slather of chipotle mayonnaise on toasted bread. Get the recipe for Everyday Meatloaf.

Eat-The-Rainbow Slaw

Our Eat-The-Rainbow Slaw combines yellow squash, orange carrot, red pepper, purple cabbage, blueberries and green cabbage and kale. Okay, we know blueberries aren’t as blue as the blue you will see in a real rainbow, but we gave it our best shot AND they add a lovely, slightly sweet, juicy addition. Salmon Burgers

These Salmon Burgers are super quick to make, easy enough for a work night dinner, but special enough for guests. Fresh salmon is combined with tangy capers, scallions, mustard, and lemon juice; you can prep the patties in under 10 minutes. Serve on a bed of greens, as we did here, or if you like a more classic burger presentation you can use a bun. Air Fryer Gluten-Free Fish Sticks

These gluten-free fish sticks are our absolute hands down favorite recipe to make in an air fryer. Firm white fish is coded in egg and potato starch before being rolled in crushed potato chips. Roasted & Glazed Carrots

Rainbow carrots! The roasting part takes place in the oven set at a high temperature. The glazing happens with the addition of a little sugar, which is optional, but gives the carrots a nice sheen and a little sweetness.
